Meet the Farmers: Sankow’s Beaver Brook Farm

Every Saturday morning Tim and Victoria travel from Sankow’s Beaver Brook Farm in Lyme to Greenwich for the weekly farmers market. Sankow’s is the state’s largest sheep farm and all dairy are pasture raised. What’s popular? Everything lamb from lamb bolognaise sauce to lamb sausage. There are eggs from free range chickens and ducks. The farm processes about 125 meat birds a week and the “butter-flied” chicken sells out at the farmers market every week.
