Tiny New York Kitchen: Cajun Jambalaya

By Victoria Hart Glavin of Tiny New York Kitchen

Can’t make it to the French Quarter on Fat Tuesday? Celebrate Mardi Gras with New Orleans favorites and have your own party (ok dinner for husband and the kids). My recipe calls for shrimp, but I’m allergic to shrimp so I left it out of my dish. 1 Pound Peeled & Deveined Shrimp (Fresh or Frozen)
1 Medium Chopped Onion
1 Stalk Chopped Celery
1 Chopped Green Bell Pepper
2 Minced Garlic Cloves
2 Tablespoons Vegetable Oil
2 Cups Chicken Broth
One 14 1/2 Ounce Can Undrained Diced Tomatoes
8 Ounces Andouille Sausages (Cut Into 1/2 Inch Slices)
3/4 Cup Uncooked Long Grain Rice
1 Teaspoon Crushed Dried Thyme
1 Teaspoon Crushed Dried Basil
1/4 Teaspoon Cayenne Pepper
1 Bay Leaf
1/2 Teaspoon Freshly Ground Pepper
1 Cup Cubed Cooked Ham

If using frozen shrimp make sure it is thawed. Rinse shrimp and set aside. Continue Reading →

Everything Dogs: Snow and Dynomite

Okay, snow is in the forecast and we’re sick of it, but, here is the good news: “Snow” is a super dog. She is just down on her luck. She was adopted from the shelter but the landlord forbade the owner from keeping her. She is a good, loyal girl who needs a chance. Here are some photos. Continue Reading →

Greenwich Public Schools Statement on Arrest of Substitute Teacher

Friday, February 28, 2014
Statement from Greenwich Public Schools Director of Human Resources Bob
Lichtenfeld

“Many of you may have seen media reports about the arrest of a substitute teacher, Mr. Michael Luecke, who has been working in a number of local school districts, including Greenwich. Mr. Luecke was arrested in Stamford for inappropriate behavior in another school district. Mr. Luecke was charged with public indecency, second-degree breach of peace and risk of injury to a minor. The behavior did not involve student contact. Mr. Luecke has been used as a substitute teacher at the secondary level in the Greenwich Public Schools as recently as this past semester. Substitute teachers undergo the same hiring scrutiny as do our regular teachers including fingerprinting, a review of any past criminal activity, reference checks, and a Google search. Really? Greenwich Parking Fails and Escapades to Blame on the Snow

This little white Honda, which doesn’t exactly blend in with the snow,  was creatively parked on what looks like a ramp of snow next door to Louie’s Italian Restaurant on River Road Extension on Thursday. Heeding the No Parking sign that refers to the street as opposed to actual pile of snow, presumably the driver has a short walk to his front door. Then there are the random bumpers and bits of cars strewn across town, peeking out of snow banks and lurking along curbs… Two great businesses to be in right now include auto body shop or car wash! Fundraiser at C Parker Gallery Benefits Non-Profit that Nurtures Veterans

Veterans make great entrepreneurs. That is the premise of BDV, which is short for Business Development for Veterans. The BDV Connecticut chapter, spearheaded by State Rep. Signs of Spring in Greenwich: Beach Stickers and Longer Days

Despite the bitter cold and wind today, there were at least certain signs of spring:

Town of Greenwich Parks and Recreation stickers are arriving in mailboxes this week. Greenwich residents whose vehicles are listed on the 2013 Town of Greenwich Motor Vehicle Grand List with either passenger or combination plates automatically receive new vehicle stickers each year. Stickers grant access to Greenwich Point (as long as driver and passengers each have valid seasonal or daily park/beach pass), Byram Park, Island Beach Parking Lot and Town of Greenwich Transfer Station. The sun didn’t set until almost 5:45pm today! That is a sure sign that spring is coming. Continue Reading →
