A new vendor at the Saturday Greenwich Farmers Market in Horseneck lot is Biscuit and Bones.
Joseph Pace transitioned from a career as restaurant owner and Manhattan chef to a venture making and selling all-natural dog food and treats in Connecticut.
The idea was inspired by a stray dog who turned up in his garage.
Mr. Pace, who hadn’t had a dog since his childhood family dog, said it would have been a challenge to own a dog in New York City. But in 2016, after he sold his restaurant and he and his wife moved to Pound Ridge, the stray dog found them.
Soon came three puppies.
At first the tiny stray female pit bull would appear at night at his garage where he would give her kibble. She was young, maybe only a year old at the time, and he didn’t see her often. After eating the kibble she would disappear.
“Apparently someone had her and just let her go. She found her way to my garage,” he recalled. “I didn’t know she was pregnant because she was very young and I didn’t see her that often.”
One night after work Mr. Pace found the dog and her newborn puppies in a disused shower in his garage.
“We kept them all,” he said. “The dog and the three puppies. Because I was a chef, I wanted to make sure the puppies lived and were in good health, so I started cooking for them. It turned into this business.”
In fact, the Biscuit and Bones logo was inspired by the stray dog, who Pace described as a bit standoffish. The puppies all became lap dogs.
“I started cooking for them and that turned into this,” he said gesturing to his assorted dog food and treats at the Farmers Market.
“I produce everything, and my wife does all the business. Essentially you have a two-star chef cooking for your dog.”
Since the move to Pound Ridge, Mr. Pace and his wife have moved to downtown Greenwich, where he continues to make dog food, jerky and treats, slow cooked in small batches.

“I make one dog food for the markets and I do custom blends for people who order 30 lbs or more. People with multiple dogs typically request custom blends with specific ingredients – maybe chicken, spinach, or celery.”
Biscuit and Bones delivers throughout Fairfield County and customers can order via the website.
“People feel that their dogs get bored with their food and they want something different,” he said. “My four dogs have been eating this food now for seven years.”
The “Beefy Feast” ingredients are USDA inspected choice beef round, sweet potatoes, carrots, whole oats, white/brown boiled eggs, green beans, chia seeds, celery and olive oil.

As for the biscuit making process, Pace said, “I do freeze dried whole beef and chicken, and grind them with a hard cheese grinder to make power. Then I make biscuits from the powder, adding dry oats, olive oil and water. There’s no junk in any of them.”
At the Saturday Greenwich farmers market Mr. Pace’s Biscuit and Bones stall had an array of all-natural dog food, CBD-infused biscuits, jerky, bone broth and treats.
Greenwich is one of four markets Biscuit and Bones participates in.
Mr. Pace does Greenwich and Fairfield. His wife covers the Harbor Point Stamford and Stamford Downtown farmers markets.

The CBD-infused “Hush Puppy” all-natural biscuits are popular. They come in beef & sweet potato or chicken & sweet potato.
“My dogs are 60 lb lap dogs,” Mr. Pace said. “Sometimes when people are not dog people come over, it works well.”
Also popular are the sweet potato chews that come in a choice of plain or with peanut butter.
The all-natural beef jerky is an ideal training treat.
“When you have this in your hand, the dogs pay attention to you. That’s how I trained my dogs,” he said.
