Augustine’s Farm stand opened for the season in Greenwich on Friday morning. The heatwave having finally subsided, there was a steady stream of customers stocking up on fruits, vegetables, honey and preserves.
“It’s been difficult,” said Kathy Augustin.”The heat was excruciating. When it’s that hot, you can’t get anything done past noon.”
“Before that, it was so wet. The soil was saturated and the plants were drowning without oxygen.”
Kathy said corn grown at her farm in Greenwich will be delayed as a result.
“We lost our first planting of corn to water,” she added. “The second is two inches tall. It probably won’t be ready until the end of July.”
Still, on Friday, fresh picked corn from Pennsylvania was available and Kathy suggested that instead of boiling it, remove the husks and microwave the ears of corn wrapped in wet paper towels for 2 minutes. We did! It was so easy and delicious.
This season, Augustine’s Farm stand operates seven days a week from 9:00am to 5:00pm Mondays through Saturdays, and 9:00am to 4:00pm on Sundays.
