For Greenwich Natives, Trish Catino & Mark Piro, Bagel Poppy on Hope St in Stamford is Also a Chance to Make a Bigger Impact on the World

Bagel Poppy on Hope Street in Stamford is a dream come true for Greenwich natives Mark Piro and Trish Catino.

Having opened in December 2025, couple’s shop is known for fresh New York style bagels, custom whipped cream cheese spreads with a variety of mix-in options and craft coffee.

Customers choose from an array of toppings – from sweet to savory – and the staff at Bagel Poppy will blend them into their house-whipped cream cheese on the spot.

The bagel varieties include plain, Everything, Cinnamon raisin, sesame, whole wheat everything, English muffin bagel, pumpernickel, egg, French toast, garlic, onion, poppy, jalapeno, rainbow, salt and sour dough.

Their signature poppies include the Ciao Poppy: any flavor bagel + mozzarella + sliced tomato + our house marinated olive oil infused with tomato & basil.

Their Lox Poppy: any bagel + house whipped caper & dill cream cheese + smoked salmon + red onion + tomato.

But there are many more delicious concoctions including the Club Pop: Chopped bacon an lettuce folded into chive cream cheese and sliced tomato on your choice of bagel and the Frenchy: French toast bagel with maple syrup and walnut cream cheese with cinnamon.

But Bagel Poppy is not just a bagel shop. The coffee offerings are just as varied. Whipped Cloud Coffee is their signature fluffy whipped coffee served over ice. There is also drip coffee, double espresso, Americano, latte, cappuccino, iced coffee, iced latte, and much more including pistachio cream and flavored cream (Nutella, Caramel, Biscoff, Vanilla, Chocolate).

“Mark and I had always had a passion for bagels,” Catino said. “We noticed there wasn’t a good spot for great bagel and coffee in this area.”

Their shop at 1032 Hope Street is a stone’s throw from Twin Rinks and a short walk from the Springdale train station. It’s a short drive from Rte 1 or I95 exit 9 via Courtland Ave. Catino said their location also draws Darien and New Canaan.

Piro is a regular presence at the shop, while Catino, operations director at Greenwich Medical Spa, works there on weekends.

The deliver a unique experience, and the response has been great.

Catino explained, “We wanted to give back to the community and make a bigger impact on the world.”

Throughout the month of May the shop will donate 10% of all their proceeds to the Muscular Dystrophy Association to support research, patient care and awareness for those affected by muscle diseases like Inclusion Body Myositis, “IBM.”

Catino said her father was diagnosed with IBM, which falls under the Muscular Dystrophy umbrella. IBM is a chronic, progressive disease with no known cure.

“Inclusion Body Myositis is a very rare progressive muscle disease where your body attacks your muscles,” Catino explained. “Everything from your breathing and swallowing are all impacted by muscles – all the way down to your toes. IBM slowly took my father’s life. We wanted to honor him and build awareness around the rare disorder.”

Catino said while ALS progresses quickly, IBM worsens slowly over time. For her father, the onset of IBM started when he was about 50 and progressed slowly over 20 years.

Her father, who migrated from Italy at 13, started his own plumbing business in Greenwich and ran it for many years. He passed away from IBM at 71.

“The great thing about the Muscular Dystrophy Foundation, which we’re donating to, is they also support other conditions like ALS where we also want to build awareness around. They are an association with umbrella of diseases, IBM being one of them.”
